The restaurant Les Caves de Marson is located in an underground rock quarry, locally called foueé. Here the white tufa for the castles and houses along the Loire was quarried. The dome like chambers, the historic furnitures and tools, the food cooked after ancient recipes. The center of each meal are the fouaces, small breads which are baked under the embers in a fireplace or hearth. The Latin word for hearth is focus, which became foyer, the French word for hearth, from which fouaces, literally "hearthers" are derived.
